Case Study: The Daffodil Mill
The daffodil mill is a renovated 17th Century flour mill situated within a country park. The majority of the renovation was undertaken through heritage funding and its operation is partially overseen by the local government as part of its arts, museums and culture programme. The mill principally works as a commercial venture but does additionally operate tours and visitor events at weekends and during school holidays. The mill produces white and rye bread flour alongside a gluten-free flour. Flour is sold to local bakeries in 25 kg bags and additional 1 kg bags are produced for sales in the visitor centre. The visitor centre has recently been extended to include kitchens where during the summer vacation they piloted bread making classes on Mondays to Saturdays.
The assessment for the BM9400 module focuses on a number of data sets linked to the daffodil mill. This is supplemented by additional tasks to ensure the entire syllabus on the module forms part of the assessment.
The module heavily focusses on using spreadsheets to undertake any mathematical calculation. In order to assist with your time management, the overall exercise is broken down into several smaller tasks (preparatory work) that align closely to the main topics covered by the syllabus.
The main topics being: index numbers (Task 1), correlation and regression (Task2), time series analysis (Task 3), linear programming (Task 5) and summarising data (Task 4). The latter topic of summarising data contains several strands such as questionnaire design, data presentation, summary measures and the normal distribution. Therefore, the questions associated with summary measures will attract the most marks on the final assessment.
The module is assessed by an open-notes examination. In practical terms, the open notes will consist of the spreadsheet output you will have generated by completing the preparatory tasks. You are also free to add and additional information which you may find helpful e.g. formulas, what the numbers mean etc.
However, there is a limit of 12 pages i.e. 24 sides of A4 paper, which can be taken into the examination with you. [Please note these arrangements may change in respect to Covid-19 pandemic]
Data sets provided
There are three data sheets located in the Excel file, Daffodil Mill
Task 1 data set illustrates wheat production in millions of metric tonnes from the UK and the Russian Federation. These figures have been obtained from a publically available source the Food and Agricultural Organisation of the United Nations (FAOSTAT) database. The figures provided were downloaded from the following web address (http://www.fao.org/faostat/en/#data/QC) on 20 April 2020. This data will be used to assess the topic of Index Numbers. Please note, as part of the preparatory work you will be asked to utilise this data base to download some additional figures.
Task 2 and 4 data set represents data collated over one year of operation. Each week the company has recorded the sales in kilograms of the three flour types (White, Rye and Gluten-free), how many wholesale bags in total were sold within the week and the number of visitors within that week. There is an additional value School Vacation Indicator (SVI) which illustrates whether the week in question was a main school holiday.
Task 3 data set refers to the baking courses that were piloted over the summer vacation period. The data records the number of daily participants on these courses that ran on Monday to Saturday during that period.
For Task 5 (Linear programming) you will be required to create another spreadsheet file from scratch.

Task 1: Index Numbers
Task 1 data set illustrates wheat production in millions of metric tonnes from the UK and the Russian Federation. The figures cover the time period 2007-2018
Please add to this data set the following information
(a) This data was acquired from the Food and Agricultural Organisation of the United Nations (FAOSTAT) database. By using this web address http://www.fao.org/faostat/en/#data/QC download the production quantity for wheat in Canada for 2007 to 2018.
(b) Using 2015 as a base point. Calculate for all three countries a Simple index number for wheat production. Present your results to one decimal place.
(c) Starting in 2007, calculate a chain index number for all three countries. Present your results to one decimal place.
(d) Construct a suitable graph to compare the simple index numbers you have calculated.
(e) Construct a suitable graph to compare the chain index numbers you have calculated.

Add any additional notes you feel may be useful and print out ALL the work you have created in (a) to (e). Please remember there is an overall limit of 12 pages/24 sides of A4 for all preparatory tasks

There will be 10 marks allocated to the section in the examination.

Preparatory work for Task 2: Correlation and Regression.
Using the worksheet Task 2 and 4 data set .Please carry out the following:
(a) Construct three suitable graphs to illustrate any potential influence the number of visitors may have on the sales in kg for the three different flour types i.e.
• White
• Rye
• Gluten free
(b) Calculate suitable correlation coefficients for the three relationships defined above
(c) For the strongest of the three relationships calculate the values which will be required to represent the relationship as a regression line
Please ensure that all working figures are presented to at least three decimal places
Ensure that you have labelled all of the new summary material created in points (a) to (c) appropriately. Add any additional notes that you feel are relevant and print out the summary information in points (a) to (c). It will not be necessary to print out each of the customers individual records. Please remember to save your work as the data generated will be used in subsequent tasks.

Preparatory work for Task 3: Time Series Analysis.
Task 3 data set refers to the baking courses that were piloted over the summer vacation period. The figures show the number of daily participants on these courses (Monday to Saturday each week).
Construct a suitable graph to display for figures for the six week period
(a) Carry out a time series decomposition on the data set for
• An additive model
• A multiplicative model
(b) Determine which model most appropriately represents the data set

Preparatory work for Task 4: Summary Measures
This file represents the POPULATION of flour sales over one year of trading at the Daffodil Mill. Please ensure that all working figures are presented to at least two decimal places
(a) Each wholesale bag of flour is sold in 25kg bags. Using this information, calculate a new column of data of that works out how many kilograms in total were sold as retail i.e. visitor sales.
(b) For wholesale and retail sales, calculate the median, mean, interquartile range and standard deviation. Present your final results in kilograms.
(c) Construct a two way (also known as pivot) table to illustrate the average (mean) sales of the three flour types for both school and non-school vacations. Ensure that this table includes relevant totals.
(d) Construct a two way (also known as pivot) table to illustrate the standard deviation for the three types of flour for both school and non-school vacations. Ensure that this table includes relevant totals.
(e) Create a frequency distribution table and frequency polygon for
• Number of wholesale bags sold each week. For this data set use the following categories >25 to 30, >30 to 35 through to >75 to 80.
• Number of retail bags sold each week. For this data set use the following categories >0 to 50, >50 to 100 through to >350 to 400

Preparatory work for Task 5: Linear programming

The Daffodil Mill are looking to expand their range of flours to include Spelt and Wholemeal flour both are to be produced for both wholesale and retail purposes i.e. produce an extra four products.

In preparation for the examination you are asked to use the linear programming technique (known as Data Solver on Excel) to assist the company in determining how many of the four different products: 25 kg Wholesale bags of Spelt flour (SW); Retail bags of Spelt Flour (SR); 25 kg Wholesale bags of wholemeal flour (WW) and retail bags of wholemeal flour (WR) to order to maximise revenue. The revenues expected from each of these four products being £2.10 for a wholesale bag of spelt flour, £1.70 for wholesale bag of wholemeal flour. The retail bags of flour both attracting a revenue of £1.85 per bag.

In order to determine this you will also need to take into account the following information which summarises the processes required to produce the flour. The company will have a maximum of 1500kg of wheat to mill into flour. When the wheat is handled there is a 5% loss in weight from the beginning to end of the process. Milling takes 2 minutes per kg to produce the respective flours and there would be a total of 60 hours available for the milling of the extra products. The flour is packed into bags where the 25kg bags take 10 minutes to pack and the smaller 1 kg bags take 3 minutes. There is a maximum of 40 hours of packing time available.

The company wish to produce between 50 to 200 bags of the two flours for retail sale. They also have a pre-order from a local bakery for at least ten 25kg bags of wholemeal flour and forty 25kg bags of spelt flour.
When undertaking the linear programming, please ensure you request a sensitivity report as part of the solution. Please ensure that all working figures are presented to at least three decimal places
